 Post subject: Spinach Salad

This so good I could just eat the dressing.
Spinach Salad
1/2 cup white vinegar
1/2 cup water
1 cup sugar
1 tsp salt
1 egg, well beaten
2/3 cup of bacon drippings from 1/2 lb. crispy fried bacon
Add first 5 ingredients to bacon dripping and cook over medium
heat until slighty thickened and yellowish. Pour over 1 lb. spinach,
1/2 red onion (thinly sliced) and the fried bacon,OR you can put
crumbled bacon, boiled eggs, green onions, mushrooms, tomatoes,
pecans, crumbled blue cheese all in seperate condiment dishes and
it can be a you top your own to please yourself spinach salad.

I love this recipe. I don't remember which restaurant I had it in when I first tried it. It was just the spinach & the dressing but now I am thinking chopped boiled eggs in it would be absolutely delicious.

Another wonderful spinach salad is a strawberry spinach salad. I have misplaced the salad dressing recipe though. :sad:

That sounds really good! I hadn't thought of feta cheese. Hmmm. Feta cheese and hard-boiled egg crumbles with a vinegarette.
