I admit I am spooked by the problem with fresh produce- partic. tomatoes and peppers right now. I tried a roasted tomato salad the other night and it was YUMMY...my new favorite. Change it to suit what you have on hand easily.
My basic is
Roast the tomatoes and onions in oven till just beginning to caramelize. Say 20 min on 450.( toss with olive oil before putting on pan.)
Let cool a smidgen and add to sliced endive or other greens you have, add fresh mozzarella or my fav . goat cheese. Toss. YUMMY. I change it by adding fresh Basil or other herbs, sometime I use flavored olive oil to roast the tomatoes.
