I am not a vegetarian yet this looked yummy on the shoe 'everyday food' titled THE BEST BURGERS . I couldn't find Tahini sauce, but did find instructions that look simple enough. I am posting recipe here - UNTRIED as of yet. Will do them tonight.
If anyone tries or has had them , let me know how you like them please.
1/2 cup medium grind Bulgar 1 can rinsed and drained pinto beans 1/4 cup plain breadcrumbs 4 scallions, thin sliced 1 large egg 1 large carrot, coursly grated 1/4 tsp cayenne pepper 2 tbsp tahini paste ( sesame-seed paste) 3 tbsp veg oil 4 toasted buns Tahini mayonnaise lettuce.
1.In medium bow mix Bulgar with 1/4 teasp course salt and 1 cup boiling water. Cover bowl and let sit for 30 min, drain in fine mesh sieve ,,pressing to remove liquid.
2. Place beans in medium bow, mash with potato masher until coarse paste forms. Add breadcrumbs, scallions, egg,carrot ,cayenne, tahini and Bulgar. Season with Salt and pepper, mix to combine. Form into 4 patties, each about 1 inch thick.
3. In large skillet heat oil over medium - low heat. Cook patties until browned and firm ( 5 to 8 minutes per side) Service on Toasted buns or English muffin with Tahini Mayonnaise and lettuce.
Tahini Mayo
in small bowl whisk together 1/2 cup light mayo, 1 to 2 tblesp fresh lemon juice and 1 tbls Tahini. Season with course salt and ground pepper.
