 Post subject: Danish Cheese Souffle

Location: hell I don't know where I am.
Thought I'd share a good recipe

3-quart casserole.....preheated oven 300 degrees Fahrenheit....baking time 1 hour

2 cups milk
2 tablespoons onion, grated
3 cups bread cubes
dash of Tabasco
1/2 teaspoon dry mustard
3 cups shredded chease
4 eggs separated


Place milk and onion in sauce pan. slowly bring to scalding point. add bread cubes, seasonings, and cheese. Remove from heat, add slightly beaten egg yolks. Blend all ingredients thoroughly. Cool. pour cooled mixture over stiffly beaten egg whites. pour into casserole. bake. serve immediately after removing from oven.
serves 4-6
