 Post subject: Blackberries

I just got out of the most thorny thicket with the best looking blackberries
I make pies and cobblers. Does anyone have anything different to share?
The berries will be on for several weeks so dig up something for me to
make please. Thanks

My mom makes an awesome Blueberry Buckle. Maybe it can be modified to make a Blackberry Buckle? I'll see if I can talk her out of the recipe!

hi cheryl, hope your trees are doing well!!!

try this if ya like muffins

2 cups all purpose flour
1 tbsp baking powder
1/2 teaspoon salt
2 eggs
1 cup sour cream
1 teaspoon milk
2/3 cups sugar
1 stick warm butter
1 teaspoon vanilla
11 oz blackberries cut in half

use center rack in oven and preheat to 400

mix together dry ingrediants

in seperate bowl mix wet ingrediants((remember sugar counts as wet))

pour wet over dry and mix with as few strokes as possible(( don't over mix and toughen-em))

fold in the berries and divide into your prepared muffin cups bake for around 15 to 20 minutes or until golden and pass the toothpick test...


the berries retain their fresh pure taste,, if you want a sweeter berry taste in your muffins take a little of the sugar and pre coat the berries before mixing

hope ya like----------oh and don't forget simple syrup + blackberries + a blender = very happy pancakes
