There are several variations on this great summer time side dish. This one has produced great results and requests for the recipe.
Asian Coleslaw
2T vegetable oil
3T white vinegar or Asian rice vinegar. I prefer the rice vinegar.
2T sugar
2 packages of crushed Ramen style noodles, I prefer oriental flavor. Seasoning packets reserved for dressing.
1/2 tsp salt
1/2 tsp black pepper
2T toasted sesame seeds or a handful of sunflower seeds, untoasted
1/4 cup toasted almonds
5 green onions, chopped
1/2 head of cabbage, shredded or 2 packages of preshredded angel hair cabbage
In a small bowl, prepare the dressing by combining the oil, vinegar, sugar, seasoning packets, salt and pepper. Toast sesame seeds and almonds. In a large bowl combine cabbage, crushed noodles, sesame seeds and almonds, and onions. Pour dressing over the cabbage mixture and toss. Serve immediately.
This is a dish that is best if eaten right away. It loses it's crunchy texture if allowed to set. When I take it to a potluck, I keep the crunchy stuff and dressing seperate. I add the noodles, sesame seeds and almonds at the last minute, pour on the dressing and toss.
Do you put mandarin oranges in yours too or am I thinking of a different asian coleslaw?
