Post subject:  Spicy Jicama Slaw

Spicy Jicama Slaw
1 large jicama peeled
4 carrots
1 red or yellow bell peper
1 poblano chile pepper
or 1/2 green bell pepper
1-in. piece of ginger
1 Tbsp sugar
1 clove garlic, minced
1/4 cup rice-wine vinegar
1 1/2 Tbsp dark Oriental sesame oil
1 to 3 serrrano or jalapeno peppers seeded and minced
1/4 cup chopped cilantro
3 scallions, chopped
salt pepper
Cut jacama, carots, bell and pablano peppers and ginger into
MATCHSTICK-CUT slivers.
Mash sugar and garlic to a paste in a large serving bowl with back of a
wooden spoon. Add vinegar: whisk in sesame oil.
Add matchstick-cut vegetables and remaining ingredients; toss to mix
and coat.
Just before serving, taste for seasoning, adding more salt, sugar
and/or vinegar if desired.
