 Post subject: Salsa Chicken

4 Servings uncooked white rice (not instant, REAL rice)

3/4 suggested water

1 cup salsa

3 or 4 boneless, skinless chicken breasts

Extra salsa for top of chicken

Grated Cheddar Cheese

Put water,salsa and rice in casserole dish (I use my
Corningware oval), stir. Place raw chicken breasts on
top and pour a bit more salsa on each breast. Cover
with lid and bake for one hour at 425 degrees. Take
out, sprinkle with cheese as desired and put back in
oven under broil until cheese melts.

I used to make this...was great. My kids are too picky now about onions and such now. Instead, I started making it with Campbell's canned pepperjack soup. They all like it well as is just too easy!

My kids are picky about onions too. Do you substitute the soup for the salsa?

Sorry about the late reply Tina. Yes, I replace the salsa with the soup. I have also used cream of mushroom (my kids won't eat mushrooms either..lol) but everyone in the house eats the pepperjack best.
