I just tried this recipe for the first time. It is so healthy and would be great for a picnic or summer get together.

Hazelnut Quinoa Salad
1/2 cup quinoa
1/2 cup bottled Italian salad dressing
1/2 cup hazelnuts, toasted, skin removed and chopped
1 1/2 cup cukes, peeled, seeded, diced
1 cup cherry tomatoes, cut in 1/2
1 cup petite peas, frozen, thawed, drained
1/2 cup yellow or orange bell peppers, diced
1/4 tsp black pepper

1. Rinse the quinoa under running water for 1 minutes.
2. Place quinoa and 2 cups water into a medium saucepan. Bring to a boil over high heat. Cover and reduce the heat to low. Simmer for 20 minutes or until all the water is absorbed. Fluff with a fork. Allow to cool completely.
3. Mix salad dressing and hazelnuts.
4. Combine quinoa, cukes, tomatoes, peas and peppers. Pour dressing over and toss. Sprinkle with black pepper and some additional hazelnuts.
Serve immediately.

Because of cost and lack of availablity, I substituted a few items. I substituted English Walnuts for the hazelnuts. The walnuts were good, but I noticed several hours later the quinoa turned gray from using the walnuts.

Where did you find the quinoa? I haven't really paid attention as to which stores sell it but the recipe sounds pretty good and I'd like to try it.

I bought it at the Merc. It was in their bulk section.

My 13 month old grandson also eats this for breakfast. His parents fix it just like hot cereal. He loves it.
