I made some tasty "Avacado Salsa" for the Superbowl and thought I would share it with everyone! If you like fresh guac, try this too! It's just a chunky version. Dillon's on 6th street has some really tasty avacados in right now!

1 avacado
1 lime
1 handful grape tomatoes or 1 small tomato.
1 red bell pepper
Cilantro
Salt and pepper

Remove the pit and dice the avacado. Toss in a bowl with the juice from half the lime right away. It is good flavor, but also keeps the avacado from browning. Cut the grape tomatoes in half, or seed and dice the tomato. Toss in the bowl. Dice 1/4 of the red bell pepper, fine. Toss. Add torn cilantro leaves, salt and pepper to taste. Refrigerate for at least 20 minutes to chill and let flavors blend. Serves 2.

I'm sure this would also be great with other traditional guac add ins, like some diced jalepeno pepper, garlic, onion, etc. I just love the fresh flavors of all of these things mixed together!
