STUFFED JALAPENO PEPPERS OR (ARMADILLO EGGS) I made these for a Tailgate party earlier in the year. People Loved them. Here are two versions I made the first. It sounds difficult but it is really pretty easy. Armadillo Eggs 1/2 lb Monterey Jack, mozzarella, cheddar, cream cheese, or combination 1/2 lb Hot pork sausage 1 1/2 cups Bisquick 15-20 small to medium jalapeno peppers 2 eggs, beaten box of Shake and Bake for pork Mix first 3 ingredients. Split peppers down one side, de-seed, then stuff with cheese, then close pepper back. Make a patty out of mixture, and wrap around peppers. Make sure all peppers are seeded. Roll in Shake and Bake. Dip in eggs and roll again in Shake and Bake. At this point, these may be frozen. If not, bake at 325F for 20 to 25 minutes, until golden brown. Armadillo Eggs or Stuffed Jalapenos 1 lb. sage sausage such as Jimmy Dean 1/2 lb. Monterey jack cheese 4 cups prepared stuffing 2 cups seasoned bread crumbs, especially Shake and Bake for pork 1 can jalapeno peppers 1 egg, beaten For the stuffing I like to use Stove Top stuffing for pork. Cook stuffing mix according to package directions. Combine sausage with stuffing. Cut stem and seeds from jalapenos, fill with cheese. Add egg to sausage and stuffing mixture. Mold mixture in egg shape around jalapenos. Roll in bread crmbs until covered well. Bake in a 400 degree preheated oven for 30 minutes or until brown. |

Slurp!!! This recipe sounds great, I think I'm going to try it for Super Bowl, I'll let you know how they turn out!!!! |
